The Aztec Mole Cocktail

30ml Sauza Hornitos Reposado 100% Agave Tequila
10ml Bols Cacao White
30ml Pear Nectar
Pulp and Juice of 1 ripe passion fruit
2 dashes Bitter Truth Xocotatl Chocolate Bitters
Shake all ingredients except for bitters and rough strain into small cocktail glass filled with crushed ice. Add passion fruit pulp from the shaker. Garnish with pear slices and a 2 dashes of chocolate bitters.
Inspired by the history of the Aztecs, credited with both the first fermentation of Agave, and the cultivation of Cacao beans, this cocktail blends both elements together. It is a good match, as the flavor of chocolate and Tequila play nice together. I also used a souring agent in passion fruit that balances the sweetness and pear nectar that provides a smooth texture that hold the flavors together. The bitters add extra complexity to a cocktail that keeps its Tequila notes, smoothed by chocolate, with a touch of sour.
